Tat Durian Kastad

Selamat petang dan selamat menjamu selera di petang hari.Hari ni layan Tat Durian Kastad pulak..memang sedap banget...terasa lemak pada custardnya...habis satu mesti nak lagi...belum rasa mesti belum tau..kalau sudah rasa..baru la menyesal tak buat awal-awal...hihi..


Custard Durian

Bahan-bahan:
1 liter susu UHT full cream
1/2 st garam
200ml heavy cream
600g ulas durian (ambil isinya)
1 st esen vanila
225g gula
180g tepung custard

Cara membuat:
1.Masukkan tepung kastad,garam,gula & esen vanila ke dalam heavy saucepan.
2.Kemudian tuangkan susu UHT ke dalam campuran tepung tadi.
3.Kacau adunan tadi sehingga sebati dan tak berketul dengan menggunakan whisk.
   Pasangkan api.
4.Terus kacau atas api sederhana hingga mula pekat.
5.Aapabila aduanan telah pekat kecilkan api dan kacau terus menerus hingga pejal & likat.
6.Kemudian masukkan isi durian dan ratakan.
7.Apabila adunan sebati dengan durian padamkan api dan masukkan krim.
8.Gunakan mixer dan sebatikan cream tadi dengan adunan custard untuk memudahkan mixing.
   Pasangkan api sederhana (hati2 cordnya jgn terkena api) dan mix sebati dengan kelajuan
   sederhana hingga adunan custard menjadi halus dan ringan.Mix dari dasar periuk supaya
   adunan mendidih tak berkerak.
9.Kemudian padamkan api dan sejukkan.

Catatan by Rahel:
*Saya guna tepung jagung sahaja dalam adunan custard untuk custard yg putih.
*Setelah custard durian sejuk simpan dalam peti sejuk.

Bahan-bahan:
250g tepung gandum
125g mentega sederhana lembut
60g gula aising
1 biji kuning telur
1 st esen vanila
1 st air sejuk

Cara membuat:
1.Satukan tepung gandum & gula aising.
2.Campurkan mentega dan digaul sehingga menjadi serbuk yang kasar.
3.Masukkan esen vanila,kuning telur dan air sejuk.Uli menjadi doh lembut.
   Rehatkan doh selama 15 minit.
4.Canai dan terap doh ke dalam acuan tart.Bakar dalam ketuhar selama 20-25 minit
   pada suhu 170'C.
5.Keluarkan dari ketuhar dan biarkan sejuk.
6.Setelah sejuk,paipkan custard durian ke dalam tat.
